What is an Offset Smoker?
An offset smoker is usually a grill smoker combo that adds the smoky flavour to your food without much effort from your side. It includes more features than your average grill; It has shelves in the smoker chamber to cook multiple food products ( mostly meats ) at once along with a firebox for smoker wood and charcoal on its side. They either come in long horizontal chambers or long vertical ones so you can pick the one that compliments your cooking space.
How to use an Offset Smoker?
Once you’ve bought yourself the most suitable offset smoker, it is time to light up that grill and get started. So here’s how to use an offset smoker:
- The best offset smokers use charcoal and/or wood as fuel which makes it all the more affordable. So start with the charcoal that has the highest heat content or dry wood for the optimum smoky flavour. Use the fuel to light up the coal in a separate container.
- Add the fuel and the lit coal to the attached firebox and close the lid. Give the coals some time to properly light up; approximately 10-15 minutes. Then add the dry wood.
- Most offset smokers have the dampers on the side. Locate those and adjust them according to your needs. This way you can control the amount of air (oxygen) that goes into your smoker and therefore control the heat in the smoker.
- When the temperature gauge shows you the temperature you require, place the food (meat) on the grill grate and close the lid of the smoker to let it evenly heat the food. To add fuel, only open the firebox and not the smoker otherwise the heat will escape the smoker.
Here’s a tip : Always keep the chimney open as a way to monitor the quality of the smoke. If thick dark smoke is coming out of the chimney, the fire lacks oxygen and then it is time to re-adjust the vents because that smoke can totally ruin your food. You can also stir up the coals to keep the fire going if the vents don’t fix the problem for you.
